Scallion Pancake

A combination of pancake / egg omlette, with J-fish & soy sauce flavor. A good cross-over food for those not yet ready for full-on okonomiyaki...

Manufacture

1: Mix all batter ingredients except water, then slowly add water to thin down the mixture so it can be poured out like a pancake.

2: Use a large flat pan, add plenty of cooking oil. Pour out the batter in a large circle over the oil.

3: Allow the pancake to cook on one side for a few minutes. When it's bubbling on top (but still liquid on top), cut it into 3 or 4 large pieces. When you cut it, the top liquid batter may run over the cut sides but that's OK. Flip each piece over.

4: After flipping the pieces, verify there's enough oil still in the pan. You might want to add more oil around the edges and then swirl the pan around to "sizzle" the pancake pieces.

Consumption

Each person eating can spoon the somen sauce on top.
